My mom gave me this pizza dough recipe and it has changed my life. We make a lot of pizza around here, and I usually use whole wheat flour. I don't know why nobody told me sooner that bread flour makes it way better. Not healthy, true... but way better! Make it!
4 C bread flour
1 t salt
1 1/4 C hot water
2 1/2 t yeast
a squirt of honey, or some sugar (maybe a tsp?)
2 T olive oil
Here's what we've loved for toppings so far:
equal parts mozzarella and fontina cheese (fontina is expensive, but SO worth it)
fresh corn and and red onion, cooked for a few minutes with some olive oil
tomato
fresh basil
Do it with or without sauce, or pesto instead of sauce...you can't go wrong. But DO try this:
olive oil (2ish T), balsamic vinegar (1ish T), dijon or stone ground mustard (1/2 tsp), and salt and pepper. Those measurements are very approximate--sorry. Adjust it to your liking. Drizzle it over the pizza right before serving. So good.
Heat oven and pizza stone to 500 degrees. Combine hot water, yeast, honey (and/or sugar), and olive oil. Mix salt in with the flour and add wet ingredients. Knead, then let rise 1 1/2 hours. Pat into 3 discs, let sit for 10-15 minutes.
Roll one of the discs out super thin and place it on parchment paper. Drizzle with olive oil and a little cheese. Place on pizza stone (with the parchment) and bake a few minutes, until cheese is melted. Take it out and add your other toppings, and then bake a few more minutes until it's bubbly.

ReplyDeletethat's really similar to my recipe... except i use part bread flour and part whole wheat... the bread flour really does make a difference! your topping suggestions sound delicious- you're making me wish I could eat cheese again really bad right now!
